My story…
I have always been health conscious to some degree, in my youth I ran track. As an athlete I worked hard, but was not as concerned about my diet. I am a Southern girl and I come from a family that loves to eat! All of our social gatherings were centered on food. I ate everything I wanted figuring I would work it off at the gym later. After I gave birth to my two children things changed… all of my bad habits caught up with me and working off the weight was not easy anymore. I love my children, but hated the consequences of my eating habits. I gained quite a bit of weight– I went from 95 pounds to a whopping 175 pounds!
The pivotal point for me was when I was playing with my daughter Dana who was three at the time. After a few minutes I was completely out of breath. I was utterly disgusted with the state I allowed myself to become comfortable with. That day I made up my mind that I had to change my lifestyle. I needed to get healthy for myself and for my family. After doing some research I decided a vegetarian diet would be best for me to reach my goals. My two biggest obstacles were meats and desserts. I come from a family of very heavy meat eaters; in one sitting one person might have a pound on meat on their plate and that’s not including the vegetables which were cooked with meat! I also cut back on my intake of carbohydrates; sweets were definitely a weakness. Making a few changes coupled with regular exercise changed my life dramatically; I have lost 60 pounds!
